Porter Cake
1 lb.
flour
1/2 lb. butter
1/2 lb. currants
1/2 lb. raisins
1/4 lb. mixed
citrus peel
3/4 lb. brown sugar
1/2 tablespoons nutmeg
1 tablespoon
cinnamon
zest of one lemon
4 eggs, lightly beaten
1 bottle Guinness or
stout beer
1 teaspoon baking soda
Grease a pan and preheat oven to
350F.
Sift the flour and cut in the butter.
Add the fruit, currants,
raisins, peel, brown sugar, nutmeg, cinnamon, and lemon zest.
Heat beer and
pour over baking soda.
Pour stout and eggs over dry ingredients.
Mix well
and beat for 15 minutes.
Pour into pan and bake 2-1/2 to 3 hours.
Keep for
a week before cutting.
