Melted Leeks
6
medium-sized leeks
1/4 cup unsalted butter
2 tablespoons water, if
necessary
salt & pepper
fresh parsley, chopped
Cut off dark
green leaves from the top of leeks.
Slit leeks about half way down the center
and wash with cold water.
Slice into 1/4 inch rounds.
Melt butter in a
heavy saucepan.
When foamy, add the leeks and toss gently to coat with
butter.
Season with salt and pepper.
Add the water 1 tablespoon at a time
if necessary.
Cover with close-fitting lid.
Reduce the heat and cook every
so gently for approximately 25 minutes, or until soft and moist.
Stir
occasionally.
Serve on a warm dish sprinkled with chopped
parsley.
