Boxty
Potato Griddle Cakes. Serve with apple sauce.

serves 8

1/2 pound potato, raw
1/2 pound mashed potato, cooked
salt & pepper to taste
1/2 pound all-purpose flour
1 egg
milk

Grate raw potatoes.
Stir into mashed potatoes.
Add salt, pepper and flour.
Beat egg and add just enough milk to make a batter that will drop from a spoon.
Drop by tablespoonfuls onto a hot griddle or frying pan.
Cook over a moderate heat for 3-4 minutes on each side.
