Pork is a popular food on the first day of the New Year as pigs always root forward bringing luck for the New Year.

Spinach Salad
Herb Roasted Roasted Pork Loin with Roasted Potatoes

Spinach Salad
3/4 cup vegetable oil
1/4 cup wine vinegar
2 tablespoons white wine
2 tablespoons soy sauce
1 teaspoon granulated sugar 
1 teaspoon mustard
1/2 teaspoon garlic powder 
1/2 teaspoon salt
1/4 teaspoon pepper
1 bunch fresh spinach
4 slices bacon, cooked and crumbled 
2 hard cooked eggs, chopped

Whisk together oil, vinegar, white wine, soy sauce, sugar, mustard, garlic powder, salt and pepper.
Wash spinach and tear leaves into bite-size pieces.
Place spinach in bow.
Pour dressing over spinach and add eggs and bacon.
Toss to coat.

Herb Roasted Roasted Pork Loin with Roasted Potatoes
for roast
1 boneless pork loin roast, 3 to 4 pounds 
1 teaspoon garlic powder 
1 teaspoon onion powder 
1-1/2 teaspoons dried thyme
salt & pepper, to taste

for potatoes
4- 6 medium potatoes 
2 tablespoons olive oil
1 teaspoon thyme
1- 2 teaspoon fresh chives
1/2 teaspoon garlic powder
salt & pepper, to taste

Preheat oven to 325°F.
Prepare roast, rinse under cold water and pat dry with paper towels.
Combine garlic powder, onion powder, thyme, salt and pepper.
Rub roast with mixture.
Place roast in a shallow roasting pan.
Roast 50 to 55 minutes.
Meanwhile, prepare the potatoes.  Peel and quarter potatoes; cook in boiling water for about 10 minutes.
Drain, cool, and place potatoes in a large bowl.
Toss with olive oil, dried thyme, chives, garlic powder, salt and pepper.
Arrange potatoes around pork loin and cook an additional 45 to 60 minutes, or until pork registers at least 155° on a thermometer.
Cover roast with foil and let stand for about 15 minutes before slicing.

Custard Fruit Tarts
6-8 prepared single-serving graham cracker crusts 

custard
3 eggs
1/2 cup granulated sugar
2 cups milk, scalded
1 teaspoon vanilla

topping
sliced fresh fruit

Preheat oven to 350°F.
Mix eggs and sugar, beating slightly.
Add the scalded milk and vanilla.
Mix well then strain.
Pour custard into crusts.
Set in a baking pan and pour in some boiling water.
Bake 15 to 20 minutes or until set.
Cool then top with fruit.
