Scotch Eggs
serves 4
1 egg, uncooked
1 cup breadcrumbs
salt &
pepper to taste
1-1/2 pound sausage
pinch of nutmeg
8 hard-cooked eggs,
peeled
deep oil for frying
Beat uncooked egg, place in a shallow dish;
set aside.
Season breadcrumbs and place in a shallow dish; set
aside.
Season sausage with salt, pepper, and nutmeg.
Cover each egg
completely with sausage meat; mould with your hands.
Roll sausage-egg in
beaten egg.
Roll in breadcrumbs, pressing crumbs firmly into meat.
Fry
one by one in hot oil until golden-brown.
Use a slotted spoon to remove each
egg, drain well.
Serve hot or cold.
Alternatively, bake Scotch eggs in a
375F for 45 minutes.
