Egg Croquettes
1 tablespoon butter
2
tablespoons chopped onion
1 tablespoon all-purpose flour
3/4 cup milk
dash of paprika
1/2 teaspoon salt
1 tablespoon fresh lemon juice, or
to taste
4 hard-cooked eggs, chopped
2 raw eggs, beaten lightly
2
cups fresh bread crumbs
vegetable oil for frying
Melt the butter in a
saucepan.
Add onion and soften.
Whisk in the flour.
Add milk, paprika,
and salt and cook until mixture is thick.
Remove from the heat and add the
hard-cooked eggs and lemon juice.
When cool enough to handle, shape into
croquettes (oval or round shapes).
Roll in beaten egg, then
breadcrumbs.
Refrigerate 20-30 minutes.
Fry in deep hot oil until
golden.
