Pääsiäisleipä from Finland

2 packages active dry yeast
1/2 cup warm water
1 tablespoon granulated sugar
3/4 cup butter
3/4 cup granulated sugar
4 eggs, room temperature
1 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 tablespoon grated lemon zest
1 tablespoon grated orange zest
1-3/4 lukewarm milk
1 cup golden raisins
3/4 cup chopped almonds
7-8 cups all-purpose flour

Dissolve yeast in warm water with 2 tablespoons sugar until foamy.
Cream butter and 3/4 cup sugar until light and fluffy.
Beat in the eggs, one at a time.
Add salt, spices, and zest's.
Add lukewarm milk and yeast mixture.
Add raisins and chopped nuts.
Add flour one cup at a time, add enough flour to create a soft dough.
Knead about 5 minutes or until smooth.
Place in a well-butter straight-sided, 4 quart metal pail. (Do not use galvanized metal.)
Cover loosely with a towel and place in a warm place and let rise until doubled in size, 1-2 hours.
Preheat oven to 350F.
Bake 1 to 1-1/2 hours or until golden and sound hallow when tapped.
Test with a long wooden skewer before removing from the oven.
