Kulich from Russia
Traditional baked in an empty
coffee can with a red rose placed on the very top. If you use a rose may sure
that it is pesticide free.
makes 3 loaves
1 cup warm water
2 packages active dry
yeast
1/2 cup granulated sugar
1 teaspoon salt
1/2 cup butter,
softened
3 eggs
5 to 5-1/2 cups sifted all-purpose flour
2 tablespoon
vodka
1/2 cup raisins
1/4 cup finely chopped diced citron
1/4 cup
finely chopped dices candied orange peel
1/2 cup chopped blanched
almonds
1 teaspoons grated lemon zest
icing
1 cup powdered sugar
1
tablespoon lemon juice
1-2 teaspoons water

Dissolve
yeast in warm water.
Add sugar, salt, butter, eggs, vodka, and 2-1/2 cups
flour.
Beat until smooth.
Stir in fruit, nuts, and lemon peel.
Gradually add remaining flour.
Turn dough onto lightly floured board.
Cover with a bowl and let rest 5 minutes.
Knead until smooth, about 5
minutes.
Place the dough in a greased bowl, rotate dough to oil top of
dough.
Cover and let rise in warm place until doubled in size, 1-1/2 to 2
hours.
Meanwhile, grease well 3 cans (1 pound coffee cans work
well).
Punch down the dough, turn onto lightly floured pastry
cloth.
Divide into thirds and shape each into a smooth ball.
Press each
into can.
Cover with towel; let rise in warm place until doubled in size,
about 1 hour.
Preheat oven to 375F.
Bake 30 to 35 minutes, or until well
browned.
Place on wire racks, let cool 5 minutes.
Remove from cans and
finish cooling on wire racks.
Combine powdered sugar, lemon juice, and
water.
Spread over the tops of warm bread, allow to drip down the
sides.
Sprinkle with silver drages.
