Asparagus in Sour Cream
Casserole
1-1/2 lb. fresh asparagus
salt & pepper
1 cup sour cream
1
cup grated cheddar cheese
1 cup soft breadcrumbs
1/4 cup butter,
melted
Remove the tough end of asparagus.
Stand stalks in a deep
pan.
Add boiling salted water to a depth of two inches and cook, tightly
covered, until just done (about 20 minutes).
Preheat oven to 375F.
Drain
and place asparagusin a greased casserole dish.
Sprinkle with salt and
pepper.
Spread with sour cream and sprinkle with cheddar cheese.
Combine
the breadcrumbs and butter and spread over the top.
Bake 30 minutes or until
breadcrumbs are brown.
