Marshmallow Eggs
2
tablespoons unflavored gelatin
1/2 cup cold water
2 cups granulated
sugar
3/4 cup hot water
1 cup light corn syrup, divided
2 teaspoon
vanilla
cornstarch
milk chocolate
Generously grease a 9:
pan.
Mix gelatin and cold water; let gelatin absorbed the water.
Combine
sugar, hot water, 1/2 cup corn syrup and cook to the soft ball stage (240). Cool
slightly.
Beat with mixer at full speed while adding the remaining corn
syrup.
Add the gelatin mixture, 1 tablespoon at a time.
Beat 7 to 8
minutes after the last addition of the gelatin.
Add vanilla.
Pour into
pan and chill thoroughly.
Dust your hands with cornstarch.
Form pieces
of the mixture into eggs and put on wax paper.
Brush cornstarch off
eggs.
Let dry 30 or so minutes.
Melt chocolate and pour over eggs.
Let
set.
Refrigerate.
