Marzipan Eggs

makes 2 pounds

1 pound blanched almonds, finely ground
1-2 teaspoon orange extract
1 pound powdered sugar
food coloring

Combine ground almonds, sugar, and orange extract in a saucepan.
Cook until mixture leaves side of pan.
Remove from hot pan, cool slightly.
Roll mixture into small egg shapes, bunnies, chicks, or whatever pleases you.
Paint with food coloring.
Place on wax paper to dry for 2 hours.
