Egg Cookies
Horiknivky are
Ukrainian cookies made with hard-boiled eggs.
5 hard cooked eggs
1
cup butter
1 cup granulated sugar
zest of 1 lemon
juice of 1/2
lemon
2 egg yolks
1/2cup blanched, ground almonds
2-1/2 cups sifted
all-purpose flour
1 egg white, beaten
mixture of finely chopped nuts and
sugar (mix is to taste)
Preheat oven to 350F.
Grease cookie sheet or
line with parchment paper.
Press hard cooked eggs through a sieve; set
aside.
Cream butter and sugar with lemon zest.
Add egg yolks, one at a
time.
Add the hard-cooked eggs.
Add lemon juice.
Stir in nuts and the
flour.
Break of small pieces of dough and roll into thin logs, about the 1/4"
thick.
Shape into rings and dip into the egg white, then into the nut/sugar
mixture.
Place on cookie sheet about 2" apart.
Bake 15 minutes or until
lightly brown.
