"Recycled" Dinner

With the idea of recycling in mind,
Earth Day is a great day for leftovers!
Pierogie Casserole
leftover
chicken or beef
Dirt Pie
serves 5-6
Pierogie
Casserole
4 ounces lasagna noodles
1 onion, chopped
1 cup grated cheddar
cheese
2 cups leftover mashed potatoes
2 tablespoons butter
salt
& pepper
Preheat oven to 350F.
Butter a casserole dish.
Cook
noodles according to package and set aside.
Melt butter in saucepan.
Add
onions and saut until softened and beginning to brown.
Combine the cheese,
mashed potatoes, salt and pepper to taste.
Layer noodles in the bottom of the
casserole dish.
Add a layer of the potato/cheese mixture, then some of the
onions.
Continue layering, finishing with the onions.
Bake to heat
through, 15-20 minutes.
Dirt Pie
20 Oreo cookies
1
cup cold milk
1 package chocolate pudding mix
8 ounces whipped topping,
thawed
1-1/2 cups of mixed chips (chocolate, peanut butter, butterscotch…)
and chopped nuts
1 graham cracker crust
gummy worms
Crush Oreo
cookies; set aside.
Pour milk into bowl.
Add the pudding mix and beat
until well blended.
Let stand 5 minutes.
Fold in whipped topping.
Stir in 1 cup of the crushed cookies and the mixed chips.
Spoon into
graham cracker crust.
Sprinkle with remaining cookies.
Refrigerate until
firm.
Decorate with gummy worms.
