Gingerbread
Men
These cookies have the texture of sugar cookies making a
great winter treat and decorating them it a lot of fun. Use either a small or
medium gingerbread cookie cutter. The cookies are delicate and will fall apart
if you use large cutters.
3-1/4 cups all
purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon
cinnamon
1/4 teaspoon cloves
1 cup butter, softened
3/4 cup brown
sugar
1 large egg
1/2 cup unsulfured molasses
icing
2/3
cup powdered sugar
1-2 teaspoon milk
decorations
raisins,
colored sugar, jimmies, jelly beans, etc.
Preheat oven to
325°F.
Combine flour, baking soda, salt, cinnamon, ginger and clover; set
aside.
Cream butter and sugar until light and fluffy.
Add egg and molasses
and beat until smooth.
Add flour mixture and mix until just
combined.
Divide dough into two parts. Roll each into a ball and flatten
slightly. Cover with plastic wrap and refrigerate and hour (or until
firm.)
Roll out one of the pieces of dough on a lightly floured until 1/4
inch thick.
Cut out cookies with s small or medium gingerbread man cookie
cutter.
Place on cookies on an ungreased baking sheet about 1 inch
apart.
Decorate with raisins, jimmies or any of the decorations that can
withstand the heat of the oven. Raisins should be soak in warm water about 10
minutes before using.
Bake 9-11 minutes do not brown.
Transfer to a cool
flat surface to cool.
Icing: Whisk sugar and milk together until liquid.
Spoon into a pastry bag and decorate as desired.
