Mock Apple Pie

serves 6-8
36 Ritz
crackers
1-3/4 cups water
2 cups granulated sugar
2 teaspoons cream of
tartar
2 tablespoons lemon juice
1 grated lemon rind
2 tablespoons
butter
1/2 teaspoon cinnamon
2 9-inch pie crusts
Break crackers
into coarse pieces and place them in one of the crusts.
Boil water, sugar and
cream of tartar in a saucepan and simmer 15 minutes.
Add lemon juice, rind
and cinnamon.
Cool.
Pour this syrup over crackers.
Dot with
butter.
Cover with remaining crust, trim, seal and make fork holes for
steam.
Bake at 425F for 30 to 35 minutes or until crust is crip and golden.
